Chicken Quesadillas

Ingredients:

  • 1/2 cup red bell peppers diced
  • 1/2 cup red onion diced
  • 1 cup cooked chicken diced
  • 1 cup cheese grated
  • 4 Tortillas flour
  • salt and pepper to taste
  • Optional: sour cream or your favourite sauce for dipping!

Instructions:

  • Step 1: Combine the bell peppers, red onion, cilantro, cooked chicken and cheese in a large bowl.
  • Step 2: Heat a skillet and spray with cooking spray.
  • Step 3: Divide mixture into 4, and spread 1/4 on each tortilla, folding the top over in half.
  • Step 4: Cook until cheese begins to melt, then flip quesadilla.
  • Step 5: Remove from skillet, slice into 3 or 4, and serve.
  • Step 6: Repeat until you run out of tortillas and ingredients.
  • Step 7: Devour.
